Meaning
Vます+がたい: very hard, almost impossible to do — not because of a physical obstacle but because your feelings, conscience or common sense won't let you: 信じがたい, 許しがたい, 忘れがたい. It sounds bookish and goes with verbs of thinking, judging and perceiving.

Important notes
- がたい does not mean 'utterly impossible' — you could do it, but you can hardly bring yourself to accept or believe it. When there is simply no way to do something, use ~ようがない.
- Set phrases are worth learning as chunks: 動かしがたい事実(証拠), 得がたい経験, 〜とは言いがたい, 甲乙つけがたい.
Common mistakes
- ✗ 信じるがたい → ✓ 信じがたい — がたい attaches to the ます-stem, not the dictionary form.
- ✗ この漢字は画数が多くて書きがたい → ✓ 書きにくい — the difficulty here is technical; がたい is about what is hard to accept, believe or forgive.
- △ 忘れがちな思い出 (meant 'unforgettable') → ✓ 忘れがたい思い出 — ~がち means 'tends to', so this says 'a memory you tend to forget'.
